Prawn Laksa



Ingredients

1 TB coconut oil

Half a jar of good quality, store bought laska paste

1 can of full fat coconut milk

Approx. 500ml of vegetable or chicken broth (Store bought broth, homemade or bone broth powder and water are all great. Just be aware that while stock cubes or standard chicken stock from the supermarket will work and taste fine, but they don’t have the same health benefits that a good quality broth will have)

1 TB fish sauce

Approx. 5 raw prawns per person. You could also use fish or chicken sliced into thin slices or omit this and just have a vegetable version.


Per Person you will need:

A generous handful of cooked rice noodles

A huge handful of baby spinach

Handful of bean sprouts

Small handful of fresh coriander

½ -1 cup of steamed broccoli

2 lime leaves finely sliced

Wedge of lime


Method

Heat the coconut oil in a large pot and add the laska paste, cooking for a minute or so until it becomes fragrant. Add the coconut milk and broth and heat gently. Once it’s heated, add the prawns and simmer until they’re cooked through. Remove from the heat and add 1TB of fish sauce.

In serving bowls, add all of the other ingredients. Pour over some of the soup and top with the prawns.


After typing this I’m going straight out to buy all of the ingredients, my mouth is literally watering!!
